The perfect roast potato - how ??

I cannot get it right.
Looking for crisp outside and fluffy inside. Tried various temperatures, tried dusting with flour, tried all manner of things.

Help !
 
Put the potatoes in the microwave to get it soft (not too long or it dries out)
Then put some spices on ... whatever you like. Put in an oven pan. Spray with Spray-and-cook, pop it in the oven until crispy and brown.

Yeah, or you could boil them for 10mins, not too long, otherwise they fall apart. It still needs to be consistent. Then mix some Ina Paarman's potato spice with olive oil, and marinate them for 10mins, then in the oven as above post suggested.
 
You have to parboil the roast potatoes first. so put them in boiling water for about 6 minutes and then put them in the oven. Or as the post above says. Microwave them to soften the inside and then place in the oven.
 
+1 for parboiling. I do 8 minutes. Then about 30 mins at 200 degrees and then grill for like 5 mins. And then I sprinkle a light dusting of paprika once they are out. YUM!
 
Step one: Peel and quarter (or to whatever size suits you)
Step two: Parboil.
Step three: Drain off in a colander.
Step four: Into a pan with Olive Oil, salt and pepper to fry off for a couple of minutes... Toss a couple of times to make sure the oil and seasoning is doing it's job.
Step five: Into the oven to bake 'till golden, crispy.
Step six: Be gracious with the compliments later, no one likes a smug chef.

Edit Greg got there first :) But try the shaking bit before frying, it helps to form the crust that will fry crispy.

2 words, duck fat. You can get it from woolworths. Par boil the potatoes, then shake them up, you will want the outside of the potatoes to look a bit broken (this is where the crispy parts will come. Then a tray with duck fat, add the potatoes and roast till done.
 
For the absolute best roast potatoes you will ever have:

- Peel and half/quarter
- Steam for 20 minutes or parboil
- Score them lightly with a fork
- Lightly coat them in duck fat, a tablespoon per four whole potatoes (available from Food Lover's Market in a jar)
- Preheat oven to 200 and roast for 1 hour

Heat the oven to 180C
Ligtly coat the roasting tray with oil, and place in oven so the oil can heat up
Par boil your peeled and chopped potatoes (about 8 minutes)
Drain in a colander and shake to get rough edges
Carefully place the potatoes in the hot oil, and stir around to try get all the sides coated.
Cook for 30 minutes, turn and cook for 20 to 30 minutes more depending on the size.
Take out of oven, drain on paper towel, sprinkle with salt and devour whilst still warm

Ye... nothing beats duck fat. its really the way to make them perfect.
 
Just the other day my girlfriend showed me the quickest baked potatoes.

2 potatoes
wrap in cling wrap
stab the whole thing once with a knife
Microwave for 6 min (potato cooks in its own steam)
 
Ingredients

1.5 kg Maris Piper potatoes, peeled

sea salt

freshly ground black pepper

olive oil

1 bulb garlic, broken into cloves

red wine vinegar

Flavour combo 1

2 good lugs olive oil

1 bunch fresh rosemary, leaves picked

Flavour combo 2

50 g butter, cut into little cubes

1 bunch fresh sage, roughly torn

1 clementine

Flavour combo 3

2 tablespoons goose fat

1 bunch fresh thyme, leaves picked

2 fresh bay leaves

Preheat your oven to 190ºC/375ºF/gas 5. Peel your potatoes with a knife or speed peeler and cut any larger ones so they're all an even-size - twice the size of a squash ball is about right. Wash your potatoes in cold water to get rid of any extra starch then tip into a large pot, cover with cold water and season well. Bring to the boil and cook for about 6 to 7 minutes, so that they're parboiled, then drain in a colander and leave to steam dry for 3 minutes. Give the colander a bit of a shake to help chuff up the potatoes – this will help to make them super crisp later on.

At this point, you need to decide which flavour combo to go with. Tip your potatoes into a tray or pan in one layer, and add your fat – olive oil, butter or goose fat – then season really well with salt and pepper. At this stage, I'm not going to add any more flavour. Toss your potatoes in the fat, or use a spoon or fish slice to mix it all up. You could get the potatoes up to this stage the day before, simply cover them with cling film or tin foil and pop in the bottom of your fridge or in a cool place until you need them. Put your potatoes in the hot oven to cook for 30 minutes until lightly golden and three quarters cooked.

Now's the time for my new trick. Gently squash each potato with a potato masher to increase the surface area – the more of your potato that's in contact with the pan, the crispier it will be. Whichever fat you're using, you now want to prepare the rest of the flavourings. Add a good lug of olive oil to a small bowl and add the herbs, garlic and a splash of red wine vinegar, then scrunch and mix it up a bit. If you're using butter, peel in a good few strips of clementine zest with a speed peeler – you won't eat these but they'll add amazing flavour. Add the flavour to your potatoes and give the pan a good shake, then pop back in the hot oven for 40 to 45 minutes until perfect for your liking. You're looking for gnarly, crispy, bubbly and delicious.

Transfer to a plate lined with kitchen paper to drain off some of the excess fat, then tuck in! I'd be happy with any of these flavour combos, but this year I'll be going for butter, but maybe with the rosemary and garlic. So you really can mix it up however you like.

Eish but you guys spend ages making roast potatoes :wtf:

Peel, wash and cut according to personal preference. Marinate in an oven dish for about 30 minutes to an hour - rough salt, tumeric and a nice guzzle of oil. Pop them into the oven. Bake until golden brown.

Alternative is to shallow fry them in oil. That's normally the way they do them for breyanis.
