Thanks - I'll still take a look at what Kloppers has but I see makro also has 60cm width paper.

I need to see if Kloppers finally has the weber burner tube I've needed since December...

I made sausage last weekend.

I knew it was going to be a lot of effort and it ended up being even more effort than I anticipated, but I was happy with the results.

I used kudu with some pork shoulder and beef fat. Sage did herb duty, and I added dried shitake mushrooms which I ground into powder.

Smoked on the Traeger using apple pellets.

Really? I looked the other day when I was on the hunt for chunks of hickory. Where are they hiding it?
It was in the area opposite the "braai" area, near the Victoria cast iron stuff.
 
Saw a Traeger the other day - have to admit I'm tempted. What model do you have?
The "small" one, Pro 575. It has more than enough space for my purposes.

I still want to add a proper wood burning smoker to my cooking gear but an Ooni or one of those Milex pizza ovens is next on the list.

I'll need to make a plan for more rack space if this works out.
Mesquite might have been the wrong wood to use for this jerky but it’s not awful. The oven baked control sample is a little nicer though.
