Just gooi, that's what a pot is all about. I usually only make oxtail, lamb neck&shank pots that contain either a bit of red wine or guinnes.

Next time I make a pot I'm going to use this recipe, http://mybroadband.co.za/vb/showthread.php?219252-Hearty-Oxtail-Recipe, I already did in the oven and it scored 11/10. Should work fine in a potjie.

When browning the meat I usually use fatty bacon pieces for flavour and I keep them in the pot during cooking.
If a recipe calls for alcohol just leave it out.
I usually let a pot go for 6-7hrs, I like it when the meat falls of the bone.
