Trigger Google search from Bluetooth car headunit?

My note 4 running android 6.01 is paired via Bluetooth to a Alpine car radio/headunit, when I hold down the call button on the headunit it triggers Google assistant but I want to change that to triggering a Google voice search, how can I do that?

Is there maybe an app or something in the phones system settings that can change it?

Voice search for what specifically? Google Assistant does voice search, unless its not set up?

You shouldn't need to press anything if assistant is set to listen for your voice always.

Sorry I should have clarified that, I want to able to do a vanilla Google search the same search that runs when you press that Google mic icon from the app tray.

That's the problem, as I clarified above I don't want to start the assistant, I want to just run a normal Google search via voice, basically like pressing the Mic icon in the app drawer. The search returns via the assistant are not great, not sure why, if I do the same search via a normal voice search I get options to open the search returns in maps, or view image etc, more handy for me, I don't use the Google assistant at all, it's switched off on my phone actually.

Ok then you can try: settings - advanced features - device assistant app. Android oreo, may be different for you. See what options pop up there when you try to change the assitant app.

Also, the current assitant app should be Google. Try changing the settings and find a setting "Bluetooth headset, record audio through bluetooth headset if available". I found that putting this on enabled Google assistant to hear me better in the car. It's set to default to still record though your phone. Turning this on will record through your vehicles microphone. I find Google assitant very helpful in the car so this is enough for me.
 
Thanks for the help so far guys, so basically I want to be able to start a Google search via the bluetooth connection, I tested it today and removed Google Assistant as the default for when you hold the call button via bluetooth and Google search is not an option when I tried again and the phone asked which app I wanted to trigger after holding down the call button.

There must be an app available that I can use to specify which app runs when I hold down the call button via a bluetooth device?
Could Nova do that or Tasker?

I have been thinking of trying that but I don't want to add an unnecessary step and it'll probably still just start the assistant anyway.

I connect my phone to the car headunit just to listen to audiobooks, sometimes I need to start a quick google search for info or get directions and assistant seems useless for that, always to get what I want with Google Assistant I have to fiddle around at the bottom of the assistant search results or run the same search via Google search, which is an added complication. With a Google search I find what I need everytime on the first page

Maybe it's because I never use the Assistant but it sucks for my purposes.
 
Here's a screen shot of each to illustrate the problem.

With the Google search results in this instance one tap on the Maps tab and I'm right where I want to be - my current location shown on a map, with the assistant it's just a page full of useless junk.

One option is how can the assistant's search results as helpful as the Search page?
