I've been playing around with setting up DNS resolvers and I'm trying out Pi-Hole and it's working really well. I setup two, one in ZA and one in EU for some redundancy.

DISCLAIMER
By using DNS resolvers you are putting full trust into that server's operators in respect to protecting your privacy. The operator of the server has the capacity to log every single website you lookup via that server, if they deny this they are lying to you. I am no exception, while I will be logging all queries done on these servers for statistical purposes I will not log the requesting IP so I am not able to identify users of the service, but only the number of queries made in total by every user.

Server 1: 129.232.222.90

You may view statistics here: http://129.232.222.90/admin/

Server 2: 145.239.115.64 & 2001:41d0:2:a65f::105

For now, they allow requests from any network (DNSSEC is enabled, however) but I will soon start adding whitelists for only South African networks.

Please leave any feedback you have down below :)
