TV & Surround Sound

Dstv audio signal is Stereo (2 channels), your 'surround' sound is 5.1 (6 channels), so the answer is No.
 
MM1 broadcasts certain movies in AC3 audio (5.1 surround) check the EPG it usually indicates if the movie is in DD.
 
Not all movies and not all channels are broadcast in Dolby Digital Surround on DSTV.

The PVR guide says that I must connect an fibre optic cable between the 2 PRV and the home theatre. My home theatre only has 2 Aux in Audio jacks

You'll need to get a DTS amp with optical input to take advantage of the surround sound from the PVR.
