Currently on 5.0.1. Been out of the iOS jailbreak scene for a while but too many apps now require a later version so I must.

What's the latest jailbroken iOS I can upgrade to?

Yes, 100% stable. I have an iPhone 5, and it works perfectly well, no issues whatsoever It doesn't matter what iPhone you have, all the phones uses same iOS

iOS 6.1.4 is only for the iPhone 5 and he asked for the latest version which can still be jailbroken, which is iOS 6.1.2.

I think you can get to 5.1.1 without having blobs saved since it seems iFaith has them cached. Have a look here, I know it says it's a downgrade path from 6.1.3 but I can't see any reason why you couldn't apply this to get to 5.1.1

Just save blobs for your current firmware and build a custom firmware first that you can revert to if it doesn't work.
