Vegetarian Curries

Looking for some great vegetarian curry recipes. I know there are some guys on here that don't eat meat so would be great if you can give me some recipes.

Broad beans, or Potato etc...

Most veg curries are easy. For butternut and cabbage ,fry some mustard seeds in a little oil, add your sliced onions,chillies and curry leaves. Braise for a few minutes and then add your veg and salt. Garnish with dhania when cooked. Yellow potato curry is similar, but you add turmeric after adding your onions and chillies.

I'm keen to use butternut, but not cabbage. How would I make just a butternut curry? Do I add the butternut raw or boil first?
 
I'm making naan, and going to have mushroom and butternut curry for dinner.

Cook the butternut on low at first. Once you see water starting to appear, you can increase your heat to medium.
