So we recently migrated to cloud based pbx\voice solution so the table phone where replaced with an app on your phone. Now and again some of the users are complaining that they sound like they are phoning under a pine apple under the sea and I suspect that our wifi might be too old

At the moment I have one oldish 10 year plus uniquify AP to cover 700m2, mostly double storey open plan. Do I replace this with newer one may two or do I go over to mesh?

At peak I have about 55 people connecting to the wifi, but on average about 15 people.
 
it should work but its always a hit and misss.Personally the best setup is voip phone with ethernet cable and running on a seperate vlan.
 
New AP/s and then making sure you are selecting the least congested channels for both 5 and 2.4 GHz..

VoIP is UDP, any WiFi congestion and or interference and it just goes down the sh!!tter..

Yes, considering that most devices these days support 802.11ac you will see a performance boost, and as @WAslayer says you need to take advantage of the dual bands.

But I agree with @ubercal, cable is king, and if possible put the app on their laptops and get them some headsets.
Out of curiosity what app are you using?
