What would be the best way to cook a fillet of Wahoo?

Anyone cooked it before?
 
Ok. What does the meat look like? Is it anything like tuna?
 
Hmm, I would probably just sprinkle some soy sauce onto it and flop it onto a griddle pan with maybe a small dollop of butter. Looks quite delicate so you don't wanna kill it.

What's it like raw with a dash of lemon & balsamic vinegar? Might be another option.
 
Not like Tuna at all. Not a red meat. More like a Natal snoek / Couta. Butter cook is really nice, or soak in White wine, olive oil, salt pepper and chicken spice, then butter high heat fry, tastes really good.
 
It can go dry pretty quickly so it needs to be seared or cooked in a sauce and not overcooked.

Cooking it like snoek is also nice with the jam mix.

I like it raw like tuna. Also salt and pepper. Ina Paarmans fish spice is also very good.

So which is it?

I can fry bake grill etc.... Cooking it tonight.
What will go nicely with it?
