I decided to reroll a warlock and would like to know what professions in cata would be best for him? I'm pve mostly. :)

Agreed. Enchanting maybe not so important and can be swapped for say Jewelcrafting, but being able to do your own enchants saves a lot of monies :p And time.
 
Mining/Herbing/Skining

Make money while you level. Save up all the cloth you get and power level your profs when your 80+
