I thought it was Blender but the guy seems to be working alone to create so many high-quality videos.

It looks like a recording of a flight sim. If it's not commercial software then something he's created himself...but looks like edited game footage. This isn't animated by hand. This is being played (the details mention the joystick and recording at 60fps).

I suspect he's still using FSX due the years of accumulated mods & planes which costs more than the game.

I suspect people will migrate to FS 2020 with time.
