So after hours of second guessing myself and wondering why my Intel NUC was not booting, it turns out these devices are not able to boot headless, well not out the box and without spending some more money on a hack.

WTF Intel thought this was a brilliant idea is beyond me because quite frankly it's stupid.... nay beyond stupid ( 1 cell amoeba kind of stupid )

If you plan on running a headless linux server, dont go nuc.

What version Nuc is it? My Celeron can boot into without a screen.

I think that this is more a Linux issue than a hardware problem.
If memory serves, some Linux desktops will refuse to load by default, if the machine fails to detect a screen. There's a change you can make to x.conf (it's been a while, so this might be the wrong name) that fixes this issue. Or you can just leave a VGA cable plugged into the machine/bridge a couple of pints on the VGA port with a small resistor (Google the latter for details)

Oh wait, no VGA port on NUCs. Software hack it is then. Or try a different desktop that doesn't have the problem.
