You with the egg sausage thing

No need to do anything other than mix it. It's already minced and processed to work with. Just cut the casing and pull out the meat. Keep it really cold or the fats will congeal when you work with it...
 
Nope. That's personal preference. Pork sausages I prefer my butcher's. Pork bangers I enjoy Eskort's...
 
Had another steak for dinner. Made a honey mustard sauce and steamed some broccoli on the side.

Was a bit too rare, but still good. I think I didn't let it rest long enough.
 
No. The sausage meat must be raw, and must be very cold. If you steamed it you'd never be able to wrap it around the egg. My method ensures that the egg doesn't cook while allowing the sausage to cook...

Small tin of tuna and a boiled egg with mayo, half an avo and 2 slices of gouda .......

Big mushrooms with bacon, garlic, cream cheese, green onions and cheddar cheese melted over. Topped with crushed chillies.
