Omelette with Jalapeno, chorizo, mozarella and Gouda, with flaxseed bread.
 
Roast beef stuffed with salami and cheese, with roasted beetroot, carrots, and celery, with a red wine gravy...

I wouldn't waste salami like that. I like to eat it on it's own.

It has incredible amounts of flavour which permeate the beef while it cooks. Delicious. And if you cook it to medium rare then the cheese only just melts, so you have a gooey, cheesy, salami filled roll of cow - enough to make satanboy want to throw himself off a building if he ate it. Yum...
 
I forgot to post our Valentine's dinner. Woolies steak with mushroom buttermilk sauce, stir fried broccoli and tatties:

I roasted a big bag of beetroot. added salt and balsamic.. then tossed it together with some lettuce and a big helping of blue cheese.
 
I'm thinking of making a spinach and feta quiche tonight.

Actually I have to do it tonight because that spinach won't stay fresh in my fridge forever.

EDIT: This ... without the crust and the mushrooms.

1/2 cup butter
1 teaspoon bottled minced garlic
1 small onion, chopped
12 ounces shredded sharp cheddar cheese, divided
1 cup milk
4 eggs, lightly beaten
salt & pepper, to taste
1 (10 ounce) box frozen chopped spinach, thawed & squeezed dry
6 ounces feta cheese with dried basil and tomato, crumbled
1 (4 ounce) jar sliced mushrooms, drained
1 frozen deep dish pie shell, slightly thawed

Directions:

Heat oven to 375°F.

In large skillet, saute onion and garlic in butter, app. 5 minuets or until just soft. Remove from heat.

Stir in 6 oz. cheddar, the feta cheese, mushrooms, and spinach. Mix well; place into pie crust.

In medium bowl, whisk together the eggs, milk, salt, and pepper. Pour over spinach mixture, poking holes to allow the egg mixture to seep inches.

Bake 15 minutes. Top with remaining 6 oz. cheddar, continue baking 40 minutes, or until knife inserted in center comes out clean.

Creamy spinach and bacon with Woolies chicken.

I butchered the chicken badly when I divided it into 4.
