this one doesnt have alcohol and uses broth

Stock is a common substitution. I really love the Nomu chicken fond stock now, don't have much time to make my own.

do you take pieces and add to a water mix with salt and spices ? leave for few hours in a fridge ? and then cook

I take a normal pot, get it to around medium high, then add smashed garlic, whole peppercorns and whatever spices I want, and chillies if I'm using them. Let them release a bit of flavour, but don't brown them. Add in boiling water, turn up the heat and let it come to the boil. Turn off the heat and let in cool (I usually do this step much earlier then when I want the brine).

Get a container large enough for both the meat and water to cover the meat properly, then use a measuring cup to determine how much water you need. Add in iced water if necessary. Don't skip the measuring. Then add in 5% salt to the volume of water.



Make sure the water is cold
. Refrigerate if you need to. Add in the chicken pieces, I usually do a 12-24 hour brine, but it can be done for less. I then pat dry the pieces and dry it out for a bit in the fridge.

You can try your luck with halaal store-bought stock but most of them aren't great.
 
As pure and wholesome a boerewors that I had tonight you will never get.

80% beef and 20% pork made by a colleague's father for the local "kerk bazaar".

Together with a my epic salad (the recipe is on a page or two ago) tonight was a filling and rewarding banting meal.

Looks delightful and the chicken is perfectly browned. Well done. But did the garlic cloves still have the skins on?

You can do either, I leave mine on because I think the garlic become sweeter. You just use your fork to squeeze out the garlic, since by the time it's cooked the texture is similar to butter.

yeah i also noticed the garlic wasnt cleaned
