Of course, the reason is Ying - his Thai wife. They live in Thailand. He has opened a restaurant there - Phed Mark.
 
Portugal- Bifana
Spain- Suckling pig and Gambas
Greece - Lamb chops and Feta me Meli
Germany - Schweinshaxe and schnitzel ( From a place called Andys) Best chicken is at Oktoberfest
France - Tartiflette ( even though French food mostly is ass)
Belgium - No need to eat just have beers ( Stoofvlees if you must eat)
 
Even though he's American it's not an issue for them to live in Thailand as his wife is Thai.

Point is that Portuguese food is not all it’s made out to be, specially local Portuguese food in portugal.

That you think Calistos is good Portuguese food explains why you're anti the food from Portugal. There are other Portuguese restaurants better than Calistos, for example Parreirinha, Tasca and Nossa Casa. Although Nossa Casa is technically Madeiran.

Portuguese cuisine relies heavily on bay leaves, paprika, cumin, fresh herbs like coriander and parsley, alongside spices like cinnamon, black pepper, garlic, origanum, and fiery piri-piri sacana. Adds a lot of aroma and flavour to the food.
