Why do manufacturers always gimp on the SUV versions?

Examples I can quickly think of:

Corolla cross is not as nice or well specced like the Corolla sedan.

Royce Royce Cullinan is not as nice/premium as the Ghost/Phantom.

Mercedes Benz GLS still basic compared to the S-class.

BMW X7 not as nice as the 7series . Etc

I suppose the marketing for an SUV will be centered around the lifestyle, whereas with a sedan they need the gadgets to make it competitive?

Because they can sell you less product for more money?
Pretty much this. More people want crossovers and SUVs these days, so move some of the standard equipment on the sedan to the options list for the crossover/SUV... profit!

It baffles me why people buy SUV's in the first place, compared to my two hatch backs, most SUV's are very cramp and have small boots for their size.

My SUV has a lot more space and is far less cramped than my previous hatchback, my wife's SUV not so much but then it is basically a hatchback on stilts.

a cross isnt a SUV

those are just lifted hatchbacks

proper SUV like x3 or x5 or MLs. the tiguan has a decent size boot as well

but a hatchback has no boot compared to a SUV

yeah i dont think you thinking about an SUV. more like a "compact SUV" or cross. we did the math, the Tiguan has alot more space than a golf gti. Including interior ( 2 car seats and someone sitting in the middle).
