Windows Server 2003 HDD Problem

I just built up a 2003 Server, Nothing fancy just trying to create a central point for all my data storage, File and print sharing requirements. I have a 80Gig SATA hdd with the OS loaded on it, a 160Gig SATA for all my Business and Work related Data storage and a 250Gig IDE Movies and Games drive. All are connected correctly, but I just cant get Server 2003 to see the 160 and 250Gig drives. I can see them in Device Manager and in the Disk Management Utility but they have no drive letters assigned to them and all the options are greyed out.. Please HELP!! Should I resort XP instead?
 
Under Disk Management - Right click on the left hand side of the drive shown (the square where Disk 1/2/3/4 etc is written) ... ie the block on the left and there'll be more options.
