Woolies pasta salad recipe request

Woolies used to do this amazing salad a few years back (15 years ago) So I might be reaching on this one.

It was a pasta salad with chicken, pecans, celery and had this amazing citrus/marmalade type dressing.

Does anyone remember that, and if so, anyone tried to make that dressing?

I've tried my hand at mixing apricot jam, marmalade and butter milk base. Its seems close but no cigar.
 
a dressing is an emulsion is usually a fat and an acid. Try lemon juice, Dijon mustard, lemon rind, Seville orange rinds and sunflower oil. Whisk the high hell out of it until it becomes the consistency of a dressing.

Man that was one of my favorites! There was some kind of fruit in it too. Mango? Remembering the name would help a lot.

I don't think there was actually mango, but it certainly had a fruity flavour going on.
But I could be wrong, and missing mango might be secret ingredient.
 
It was a citrus and mango dressing - sometimes the mango was not well puréed and that’s why I thought it had fruit in it. It wasn’t marmalade but the mango that gave it the sweetness.

If I remember anything else I’ll let you know, I’m going to try making it too.
 
Actually, maybe there was some marmalade in there with the mango. This requires experimentation.
 
I've played with Marmalade and apricot, but I'm going to play around with Marmalade and Mango. I'll update this thread and keep you informed as well.
 
Sounds lekke.

Our PnP has winglets these days and I'm experimenting with sauces to airfy them.
Trying to get them a bit spicy.
