Less than R2500, including the pi. The airflow sensor is expensive, about R800

Nice one Jaco! Now can (at least some of) that be achieved using Arduino or PIC to reduce costs I wonder...

Just installed Rasplex onto my Pi2B and boy was I impressed, using Ipad and Phone as a remote,
So good was this simple little device on a home wired network, that I ripped my WDlive out and replaced it with the Pi.
Going to order another tomorrow.....
If you have not tried Rasplex yet, Do it!

Might I suggest you also look at an OS with Kodi, something like LibreELEC with the Plex for Kodi add-on, it's way more up to date, RasPlex was last updated March 2017, you will get the powerful Kodi video player that will give you proper refresh rate switching etc and you can also then use other Kodi streaming add-on it's that's your thing.
I also just personally think the Plex for Kodi UI looks really nice:

H.265 decoding gotten any better? I wonder if the RPi3b+ has the extra oomph to eek the last few fps from that format... I kept downloading H.265 videos feeling all smug about the download size then arriving with the popcorn only to be greeted by 15-25 variable fps and feeling a fool. I could just load Kodi on to an old laptop and stick it under the TV but I would be sad about the extra watts and wouldn't know what to do with my 3D printed VESA Pi mount.

I want to build a PM2.5 thing but the reliable sensors are quite expensive. 400zar ish. Cheaper ones seem unreliable.
Do a indoor braai & see if the values flyMy PMS7003 arrived from eBay. Cost 18 pounds. Hooked up to a Wemos and outputting values to OpenHab. Took 10 mins
Seems to work well. How accurate I can't say as nothing to compare it to, but this model gets good reviews.
Dit you ever want to use multiples of the same i2c devices or other devices with the same i2c address. Take a look at this tutorial. No more slow multiplexers or soldering bridges on i2c devices. This is a super fast solution, build in to the latest raspbian distro using GPIOs as i2c busses.
I added an python example for two BMP280 Temperature and Pressure sensors. You can easily extend it two much more BMP280 sensors.
