Is it illegal (in SA) to download movies/documentaries from YouTube i.e. is it the same as downloading torrents which is illegal?

Unless you get a DMCA take-off your computer notice, you don't have to worry.
 
My understanding is that whilst downloading a torrent, at the same time you're also uploading (seeding) the same torrent and that that (the uploading part) is viewed as distribution and as you don't hold the copyright to the material, it is illegal.

Yes, that is correct. Distributing copyrighted material is illegal. Torrents aren't only used for illegal media and there is also generally nothing forcing you to seed (on public trackers).

There's also an extension for Firefox but I don't remember the name, you won't get one for Chrome.

What do I do after I have added "ss" to the url? Do I copy the URL with the added double 's' and paste it in the Google search engine or what?
