Your favourite KFC recipes.

These days I can't risk buying KFC anymore since the hygiene has been suspect for quite a while.

My only alternative is to make it myself. I've tried it before but it never comes out quite right. The batter is always too hard or crusty afterwards.

How do you make KFC chicken if you do make it?
 
Dont they have a special pressure cooking type of thing...
 
Best one I ever did consisted of chilli flakes (minimal), cracked pepper, various other spices and a half corn flakes half bread crumbs mix for the coating ............. actually quite blerry tasty :D
 
The foodie conspiracy nuts will have you believe that it is merely salt and pepper and a unique cooking method. I dont know of any leaked recipes but Moederloos' link is pretty good - have used a couple of recipes form there and they are pretty good.
 
KFC is the easiest recipe...
Salt and ground black pepper are the only spices, they use a special kind of flour (not the same as snowflake) and the oil is important(i think it's a corn based oil), that's all!

I know this because my friends mom worked for KFC, and she makes it exactly the same.. actually better. ;)

I found the recipe online as well when I was still at high-school and argued with my mate that his mom was lying about it being so simple and that I would prove it but the site I found gave me the exact simple recipe and strangely does not exist anymore *conspiracy*

It's not a conspiracy, disinformation was used to keep the simple recipe a secret.

Salt and freshly ground black pepper cooked at the right temperature with batter is addictive!
 
And don't forget to abuse the chickens and feed them that special bone/fishmeal/un-natural growth hormone combination... makes them tender (and glow in the dark)...
 
Yep - MSG is imperative if you want the Colonel's special recipe testicular cancer!

My chicken came out crap and I made a huge mess in the process. :(


I precooked the chicken drumsticks for a couple of minutes in the microwave.
I then dunked it in beaten egg with a splash of milk.
Then I rolled it a couple of times in flour mixed with Ina Paarman's Chicken spices, KFC's satchets of chilli salt and pepper.
Then I dropped it in the pot of hot canola oil and cooked it for 10 minutes.

It was alright I guess for normal cooked chicken but it was nowhere near being authentic KFC.


Now I've a heap of dirty dishes waiting for me in the kitchen. I'm just waiting for the oil in the pot to cool down a bit so I can pour it back in the plastic bottle and throw it away.

Sorry to hear. What exactly was the problem? Dry chicken? Bland flavour (oxymoron this). Too salty? etc... Or lack of breadcrumbs? ;) The flour mixture will just crisp the skin but wont really add a coating like KFC.

Next time I wouldnt use a premixed spice. Rather get a pestle and mortar and use fresh spices. Roast them for a minute before crushing them together to release the oils in them and add more than you normally would because once you mix it with flour it dilutes the flavour. You need a lot of salt - taste the mixture before placing it on the chicken - its only raw flour - wont hurt you.

Deep frying chicken is also not the only way to get great tasting crumbed chicken pieces. I marinate my chicken pieces overnight in a yoghurt mixture and place them in an oven to bake with breadcrumbs sprinkled on top. More goes into it than that but thats the basics - tastes awesome! And you can play with the recipe to suit your states.

Your spices are too complex...
No need for egg just milk.

Think about it.. if you are going to sell chicken on mass the ingredients should be economically viable, besides when he colonel made his chicken back in the 30's there was not a lot of spice choices available... except for salt and black pepper..

*mmm delicious, I'll make me some KFC chicken tomorrow.*
