So this isn't a particularly great pic, but I thought the story behind it was funny.
I was making curry and bought a bunch of dhania. Now, dhania prices are at an all-time high due to shortage because of the heat recently. Apparently at one point it was R40/bunch -
if you could find it.
I got a bunch at R23 or so, but only used some of it for the curry. Now I didn't want to waste the rest, so I pulled out a pack of lamb chops from the freezer, and made a coriander/sesame oil/garlic & ginger etc marinade. There was more than enough of the marinade, so I made a sauce with it by adding the marinade to some Greek yoghurt.
I marinated the chops for a few hours, then put them in the oven to cook while I did some work. In the oven tray there was a ton of liquid, and I added it to a bowl when I flipped the chops. I tasted it and it was amazing, so I considered saving it to use as a sort of stock the next time I made something. Then I thought 'why not do a gravy?'
Gravies are simple enough, but I haven't really made a traditional gravy much, or in a while. So I made a roux, added the lamb stock, and added in some chicken stock from the freezer. Cook for a bit, and Bob's your uncle.
Now the problem is that I didn't want the gravy to overpower the taste of the lamb + marinade, but when I opened the freezer I saw some frozen chips from way back. I popped those in the airfryer while I made the gravy and rested the chops.
Plated the lamb chops with the yoghurt coriander sauce, and added the gravy to a serving of chips.
So because I wanted chicken curry this past weekend, I ended up with lamb chops and chips with gravy tonight.
Made me laugh. Anyway.
