Your stove goes on the blink (or you run out of gas) and you need to only use your microwave oven for a meal.

You may not braai or make a potjie, etc.!!!

And baked beans on toast is NOT an alternative, neither is reheating leftovers...

Quick and easy mince loaf

Ingredients
1 slice brown bread (2cm thick)
125ml milk (1/2 cup)
1 egg
750g minced beef
30g oxtail soup powder (3 tablespoons)
5ml salt (1 teaspoon)
2ml dried thyme (1/2 teaspoon)
Pinch of pepper
1 small ripe tomato
30ml coarsely grated Cheddar cheese (2 tablespoons)
Paprika

Method
Soak the brown bread in the milk and mash it. Beat the egg and mix with the bread and milk mixture. Add the minced beef, oxtail soup powder, salt, thyme and pepper and mix. Press the mixture tightly into a 1,5l (6 cup) microwave loaf pan.

Slice the tomato thinly and arrange on top of the meat. Sprinkle the Cheddar cheese and a little paprika over.

Cover the corners of the pan with aluminium foil. Make sure that the foil doesn’t touch the sides of the oven.

Microwave, uncovered, at 100% power for 15 minutes until cooked. (Take care not to overcook it, remember that it will continue to cook during standing time.)

Turn the pan from time to time if your microwave oven does not have a turntable.

Allow to stand for at least 5 minutes.

Turn out carefully and serve.

Great with a salad or two!

I'll have to take a photo next time! I typed this from a handwritten recipe that we use. Let me *spits* google for a similar thing...
 
Ah ok, no need, I'll google, just though you might have taken a pic, anyways, my mouth is watering, reckon I'll give it a bash over the weekend :D
 
CABBAGE ROLLS

Cook Time: 4 minutes
Prep Time: 5 minutes

Ingredients

2 cabbage leaves
½ cup chopped mushrooms
½ teaspoon salt
1/8 teaspoon garlic powder
½ cup water
2 tablespoons Ricotta or Cottage cheese

Instructions

Prepare the cabbage leaves. Use a microwaveable dish that is large enough to lay the leaves out flat. Cover each leave in about 1/8th of an inch of water and microwave for 2-3 minutes. The leaves should be soft but not soggy.

Chop the mushrooms. Microwave your filling for 30 seconds. Stir, mix in a tablespoon of water and microwave for an additional thirty seconds.

Remove the cabbage leaves from the water and pat them dry with a paper towel or clean cloth. Sprinkle each leaf with a pinch of salt and mix the remaining spices in with your mushroom filling.

Lay the cabbage out flat on a plate and place one tablespoon of ricotta/cottage cheese on the cabbage. Add half of the mushrooms and roll. You may either fold both ends or leave them open according to preference. The tighter you roll the cabbage, the nicer it will look. You can also use a toothpick to keep it together.

Serves 2.
 
1 MINUTE BROWNIE IN A MUG

Ingredients

1 Tbsp cocoa powder
1 Tbsp flour
1 Tbsp brown sugar
1 Tbsp water
1 Tbsp canola oil
a pinch of salt
ice cream, optional (compulsory in my case!!)

Instructions

1. In a mug (or small microwave safe dish) add the cocoa powder, flour, sugar, water, oil, and salt.
2. Stir well to combine.
3. Microwave for 30 seconds. Serve warm with a scoop of ice cream.
