What is the science behind it? How does it work?

Why does a 10mb line take so much longer to sync compared to a 4mb line for example

I'm just guessing that your ADSL modem/ DSLAM pretty much just tries all the possible ADSL speeds (most likely in 1Mbps steps), from 10Mbps downwards till it gets one with an acceptable SNR margin.

I'm actually very curious to find out exactly how the ADSL modem & DSLAM negotiate the speed, and if "intelligent" ADSL modems can't simply calculate the "best" sync speed instead of iterating through all of them.
