If the IPC is decent then they've reduced the TCO for a certain level of compute
 
Most servers run Linux no?

Depends entirely on the workload being asked for....

Web servers are more than likely predominantly Linux.
Corporate servers are more than likely predominantly Windows
DB servers probably a split (depending on the size of the organisation)
