Any must-have programs for Linux Mint you can recommend?

Which models do you have? Every Canon printer and scanner I've tried have just worked 'out of the box' in Ubuntu.

My Canon scanner has 64 bit drivers for Windows. What model do you have?

Canoscan 8800F. I just tried it with the new version of xsane and it seems to work now, but the interface is very clunky.
 
Not sure what you're looking for when you say "clunky" but maybe Simple Scan meets your needs - http://community.linuxmint.com/software/view/simple-scan

... I don't use Mint but find it very useful on Fedora for straight forward scanning.

I know what you mean, gimp can be useful but is overkill for a "simple scan" (yep - sane front end) :)
 
Do you know a way of installing plasma 5 on Mint? I've tried but it gives me errors some of which indicate that the ppa's aren't stable or something along those lines.

AFAIK the PPAs was removed or can't be used with mint anymore.

You can always install kbuntu 15.something that comes with plasma 5 or arch and then add plasma 4:D
