Jailbreaking an iDevice does not give you root access, it bypasses Apple's restrictions and gives you access to the Cydia store...

Jailbreak gives you the ability to run as elevated security.

However you do not get root access remotely (ie connecting over wifi), only when connected via usb or installing a package. Even then it is limited unless you install AFC2 (Apple File Conduit) that allows remote root browsing over USB.

For most people, jailbreaking has no impact on security of their phones unless they install pirated apps with malware in them.

The only way you open your phone up, and need to change the root password is if you install OpenSSH. Then you allow remote connections to the phone via IP. This is not installed by default.

So TL,DR - jailbreaking is safe, don't install pirate apps and if you install OpenSSH then change the password.
