Are your security cameras vulnerable to hacking?

No They have a 250M range and are mobile. Damn Terminators Moving around with them.

Hikvision System, but it is on a separate offline network, as I am paranoid like that. It is only accessible via VPN, it can't even update it's own time...

Ours is on a separate network sans internet access.

As it should be.

We can access the DVR remotely and view the camera feeds, but we cannot access the cameras from our LAN except through the DVR.

I used to use HikVision and I know for a fact there's a backdoor in. I've exploited it myself when I couldn't reach the camera via "conventional" means.

**** like this scared me. Hence why I got a Mikrotik which could handle multiple VLANs and different DHCP servers. Also firewall that does not allow comms between them

So what are they even going to see? Me scratching myself on the couch?

This was covered, it's not about accessing the cameras so much as accesing the rest of the LAN via the camera or DVR which runs a complete OS.
They can do that? Oh geez. Lucky I took mine offline, mainly cause I was lazy...not out of security concerns.

I tend to prance around in my undies at night and 'water the plants'. Not stuff I'd like exposed to the net
