Basil Pesto

I do the same as other recipes in this thread but I use malt vinegar and then less salt than you'd use otherwise.

A single sundried tomato can also round it out nicely but don't forego pine nuts - that's how it's made IMO.

These nuts suggesting you use other nuts, are nuts.

First attempt will definitely be with pine nuts. I love balsamic vinegar though so will go for that option.

yea go with pine nuts, why not hey? I will do that next time as well. Personally, I think red wine vinegar works best in a pesto, but experiment with that and see.

Considering my new found love for the stuff I'm sure various combo's will be trialed and error'd :D
