How do you prefer preparing it ?

Any other way and I won't touch it.
Do you just prefer it that way for the taste, or does that recipe have particular health properties ?
Boil it as you would boil potatoes... teaspoon of salt into a pot of boiling water, add beetroot and boil 'til soft.
Slice into chunks and eat as is!
Or let it cool completely, slice thinly, add sliced onion and enjoy.
That, minus the onion, and a bit of vinegar, tiny amount or sugar and salt. Either sliced or grated. Yum.
Have made honey & balsamic roasted beetroot before. Goes well with goats cheese.
I ended up roasting them in foil in the oven (nestled in some rock salt and thyme), after which I peeled them, cut them into slices (or wedges), put them in a pot, glazed them in a scoop of butter and then added a bit of cabernet sauvignon balsamic vinegar at the end to make a syrup.
