blue berry cheese cake

Be prepared to pay $$$$$. That Philadelphia cheese is hellish expensive.
 
Cheesecake is sour and nasty. wtf do you wanna eat cake that is sour?
 
Must check that out then. I love cheesecake but we make pavlova now instead because of the cost.

Can condense milk, tub cream(whipped), tub smooth cottage cheese. 125ml (fresh squeezed is best) lemon juice.

Combine cottage cheese and condensemilk.
Combine whipped cream and lemon juice.
Then combine all together.

Base 1pck crushed/crumbed tennis biscuits with melted marge/butter to line the dish. Edit: I forgot this needs a spoon of sugar.

Place the top mix in dish.

Place in fridge. For best flavour wait 24hrs.

IMO a cheesecake absolutely needs to have cream cheese, no exceptions. That plus sour cream will be delicious, with eggs, sugar and lemon juice... otherwise you could use mascarpone or condensed milk, dulce de leche

On top of that you need to get the base right. Americans use graham crackers but you can't get them so easily. Marie biscuits work fine. Get a packet and mash it up into fine breadcrumbs, and mix it with sugar, melted butter, cinnamon and powdered ginger. Press it on the bottom and bake it for 10 minutes or so to get it solid.

As for the blueberries, that's totally up to you. If you aren't baking, you could easily mix them into the cake. Just make sure they're cold and not mushy or the colours will mix into the cake. You could try making a thick jam with half of it, and spreading or decorating it over the top of the cake, then sprinkling the remaining berries on top. I did that with raspberries before.
 
Cream Cheese, + Sugar whip the $hit out of it, add blueberry compote over, in the fridge to set.... done
 
Cheese cale factory is a chain resturant in the states. You used to see it regularly mentioned on big bang theory when penny worked there

A true cheesecake is baked - don't EVER make a fridge one.

I use normal smooth cottage cheese and a Marie biscuit base. I also have a recipe that uses one and a half kilos of Philly cream cheese
