Bread substitute

So, on doctors orders I decided to change my diet end of last year. Just smaller portions, and I cut out bread. So I lost quite a few kg's and in order to keep it off I now need to keep this up.

I also love burgers, rolls and all manner of other bread. What can I use as a substitute?

As an example I have not had pizza in two months, base is bread. What can I use as a substitute?
 
@APoc184 makes a few keto things which are basically just cheese & egg. You can make bread with oat flour which is quite nice. Quinoa flour, coconut flour, rice flour - a bit trickier to work with but certainly possible.
 
You can play with PB bread. ( Peanut Butter Bread ).

Simple recipe: 3 Eggs, 3 Tbls PB and 1 tsp baking powder.

We double that into a loaf tin or you can try to make rolls or use it as a thin crust base etc. The wife also has a coconut flour pastry base but that can get scratchy on the throat. If you like pizza, look into fathead dough and mozzarella bases but I like the simple PB and it works fine for me.

On a more serious note, almond flour, coconut flour, sunflower seed flower, peanut butter, and zucchini/cauliflower pizza bases are all options, but IMHO none of them are quite nail that texture just right.

There's also the meatza pizza substitute : pizza base made out of mince. Or just make omelettes like saor suggested and fold the sandwich fillings inside it

Op, there is a local cookbook that has substitutes and a few other ideas, we used it when starting out , you can look into it ( Low Carb is Lekker! )

Otherwise go browse Reddit under KetoFood. Lots of recipes.
 
Try Chicken Base for pizza. I haven't made it in a while so can't remember the exact recipe. But if I remember correctly it is 2 x chicken breasts, 1 x egg, 1 tablespoon coconut or almond flour and a cup of cheese blitzed up in the food processor.

Roll out into pizza base. Bake until golden brown. Take it out, put toppings on and put it back in under the grill until cheese is melted/charred as desired.

There is also the very popular fathead dough (Google it) but I prefer the meaty base. Cheaper and fits in better with my protein macro needs.

As for the bread. Try Chaffles. (Cheese Waffles)
Cup of finely grated cheese - We tried all variants and mozzarella works best for me.
1 x egg.
bit of almond flour
some seasoning

Scramble it all together nicely. Slap it in a waffle maker until crispy.

Will share some pics now.

Wife says : "Warm oven at 180 ( she uses 160 as element is strong and old oven, not sure if thermo accurate ) then bake for 25 - 30 mins.

Also if you want to try it as a pizza base, the mixture is quite runny, I would use less baking powder ( so less puffy ) and spread it on a thin sheet , bake it like that first. Then add tomato base , cheese and toppings and bake.

Chicken base sounds interesting , must try that one. Chaffles works well too.
 
I presume the "healthier" bread options are also out of the question? What about what we would call "Fresh" bread, that kind that is **** lekker when its hot from the oven and you cut a moerse dik stuk and put 3 inches of butter on it.

Raw chicken breast or cooked?

It goes into the food processor raw along with the egg, cheese and almond flour. And some seasoning. Chop it up into pieces to lessen the workload of the processor.

You then bake until cooked golden brown and edges turning crispy. Then sauce, toppings and cheese go on before back into oven (on grill) to melt cheese and heat toppings.

That's out as well. My first peanut butter bread is in the oven. Let's see how it comes out. I'll one by one go through all the ideas.
