CAN I USE 6+ HDD'S SIMULTANEOUSLY

I'm seeing read and write speeds of 200MB/sec. I didn't think the disks could even write that fast. Run multiple tests now and checked live stats using iostat.

What drives are these?

I ran a bench on a 7200.10 (or .11?) seagate & new WD Blue yesterday and the WD blue did about 167MB/s while the old seagate was 60MB/s slower. This via the normal onboard sata on a R630 MB. Afterthat I immediately cloned my OS drive over to the WD blue and you can notice the difference.

I'm pretty sure you can get better speeds on performance drives & hardware.

These are just regular Seagate Barracuda 1TB 7200rpm drives.
 
Thinking outside the box here... How about external enclosures and a mega usb hub?

This wouldn't be a great way to go as you're going to be limited by the USB bus speed. If you're using USB2.0 you're already screwed, USB3.0 will be workable but not anywhere near as fast as a SATA solution once you start adding more drives. Also you're going to have to plug all these external drives in to the wall and it's going to get messy.

Sure, but should be way cheaper than a SATA solution/NAS?
