i get bored with making the same dishes all the time and come up with my own dishes. this one is quite delicious if i may say so myself. :D

cut up potatoes into 4's and lay them into a roasting pan. sprinkle with a little oil and roast for about 20 minutes.

1 green pepper deseeded and cut into strips.
1 red pepper deseeded and cut into strips.
1 onion peeled and roughly chopped.
8 pieces of chicken...........i prefer to use the thighs. sprinkle with chicken seasoning.

take the potatoes out and layer the peppers and onion on top of potatoes, then place the chicken pieces on top and roast till the chicken is cooked.

voila - what a yummy dish this makes.

if you want to add your own vegetables be my guest. :D
 
I make a similar dish, but add onions to the peppers which caramelise nicely. I also add sliced pork sausages, balsamic vinegar and ripped up ciabatta bread coated in a little oil which crisps up brilliantly. Sometimes chuck some smoked paprika on the chicken, with the obligatory salt and pepper...
 
I 've lost you here: so are the potatoes in or out .... ?

:D that is what I thought, but me thinks she means take the potatoes out the oven place everything on top of said spuds and return the whole dish including the spuds back into the oven...

Aha!! Sorry, I am only on my 2nd cup of coffee for the day; not quite awake yet :)
 
teehee sorry man. take the potatoes out the oven, and put the rest of the ingredients on top of the potatoes.
