You can make grids but then end them with an avenue that conforms to the lay of the land. It's also cool to make a central road in your grid that's got no zoning and replace it with lots of trees with pathways, parks, monuments etc. Or on the fringes of the high density grid have low density sprawl. Just takes a little bit of trial and error (and patience) :)

Indeed, and lots of bulldozing and rebuilding.

EDIT: Usually once the city is running nice and stable then one starts doing beautification, the problem is by then I'm already bored you see.
