Cleaning kitchen utensils

I can't imagine many germs will survive white vinegar. I use only white vinegar to wipe down my countertops every day. Cheap, non-toxic and it works. I try to keep the use of chemicals like bleach to the minimum.
 
Unless you have deep gauges in your wooden chopping board you should just wash them off with a little dish soap and warm water. The wood has natural anti bacterial properties and soaking it or putting it in the dishwasher removes those properties and leaves moisture in the board giving the bugs a place to live. Wood will also heal to a degree and smaller gashes will disappear.

If you do have deep gashes (and you shouldn't unless you've been playing Hassan chop with the thing) then you should take off the top surface or chuck the board out if its too thin for that.

Chefs knives should be wiped off while cooking and then washed in warm soapy water after.

Neither of these should go into the dish washer ever.
 
If your board smells a bit funky, wash it in some cold water mixed with a teaspoon of bicarb. Funky smell disappears.

Also, if you don't want to smell like lavender/spring/forest/fruit/chlorine manufacturing plant, then drop a teaspoon of bicarb into the washing powder feed tray in your washing machine and get a fabric softener. Lose the staysoft and save some cash.
 
Is there any particular reason for using a wooden chopping board? I suppose it is easier on the chef's knives? I use toughened glass boards and also a loose granite floor tile.

That's right. The knife cuts into the boards. Protects the edge
 
Bleach is fine, but can be toxic to pets, so use carefully. To prevent wood splitting, you can oil the boards from time to time with ordinary vegetable oil.
Lemon juice or vinegar work well to disinfect and degrease kitchen countertops. You can bleach your cutlery in a bleach and dishwashing liquid solution, then rinse in water with some white vinegar added: a brilliant shine which works very well on wine glasses and other glassware too.

I wash the board in the soapy dish water and I just use a wet dish cloth to wipe the table surface.

If I get the trots, I just consider it a colon cleansing.
