As an inexpensive alternative to illustrator she might have a look at VectorDesigner - http://www.tweakersoft.com/vectordesigner/index.html From the sounds of what she does perhaps even Apple's own Pages? Have you tried Parallels or VMware? Not sure about VMware but Parallels has a free trial. Then she could run windows virtualised instead of rebooting all the time.
