Crayfish!

I've managed to acquire a few tails from a friend but the wife and I have never actually cooked crayfish. Our friend suggested using the same recipe as a good prawn curry but obviously substitute the prawn for pieces of crayfish.

Help us out please and suggest best recipes for this "rare" protein.
 
Grill with garlic butter?

You're going to have to steam it to remove the vein and it loses some of the flavour if you cook it like a prawn curry.
 
Butterfly them with the shell on, garlic butter, salt, pepper and a dash of fresh lemon juice. Braai shell side down till flesh is no longer opaque, flip over for a few seconds and remove.

Eish ... be a waste to curry them ....

As these ous say, garlic butter, and braai ..... but not over braai
 
Keep it in the shell, throw it in the oven for a couple of minutes with some butter melted over. Garlic butter can be added towards the end.
I don't know how long though. I forgot. Haven't done it in years.
 
Remove from shell and poach in a block or 2 of butter. Might as well go all out.
