Virtually all milk is now Homogenised to combine the cream into the milk where it will not normally separate.

When I was at school our milk always had cream at the top of the bottle and one would shake the bottle to combine the cream.

This happens with any UHT milk that stands for some time... I see it in clover, parmalat for example. The milk in OP has obviously been standing and separated.

It was from a superette so that explains it standing for a while.
