You make friends with them, that's how. They will sell to the public if you make it worth their while. So you might have to have a large amount of bacon sitting in a chest freezer but it is worth it.

Perfect. How long do you leave it? Too long and it turns mealy in texture. Not long enough and you just wasted an hour or so...

Overnight-ish. Is that OK? I'm not too clued up on it, to be honest, it was a tip on one of Heston Blumenthal's shows.

For a whole chicken that is right. For individual pieces, no longer than about two hours...

If you trust my judgement, then please do yourself a favour and order the smoked neck bacon from Frey's Food Brands. You have to order it through a distributor though. In JHB I order and collect from Blue Marine - they've got a Durban Branch as well.

It is some of the best bacon I have ever tasted. Ordinary store bacon pales in comparison, and it is dirt cheap too...

I do. Thanks I will try and get hold of them at some stage.

@ponder. There is a small delicatessen in Stanger street called the Bavarian delicatessen....they make there own bacon and tons of other cured meats and sausages. They cater for the German community mainly and when you step inside you feel like you are overseas. Ask them to slice you some breakfast bacon.

There is no turning back.

I get my bacon from a butchery in Edenvale called Schwaben.

The best bacon I have ever tasted. Tho I am going to have to try and get some of that neck bacon DJ mentioned.

You're also in Durban North, try Karoo Butchery, their bacon is pretty good as well. I like the bacon bits, I buy a pack at a time then use them for omelettes.

Also, I think you're talking about Prince Alfred Street, not Stanger.

Yup, as you're going toward the harbour, it's on your left. I actually only noticed it last week, and I've been doing work around town for the last 10 years.

I'm in namibia, they have the most amazing meat. Had some bacon yesterday it was unbelievable. Sorry I realise this doesn't help you.

Saw local P'n'P had some bluff meat supply vacuum packed bacon. Tried some & it's much better that eskort/enterprise stuff.

I don't know about water, but the supermarket stuff is all way too salty for me.
