Dual Channel RAM is just normal RAM. The difference is that you put two sticks of dual channel RAM in the same channel and you're supposed to get some performance increase, but this has been shown to be less than 1% and not worth it.
Yip very low performance boost in games you won't even realize a difference. Which is sad really since DDR2 ram is so dirt cheap you can easily afford 2 ram sticks for dual channel.
Surely the performance is dependent on the MB design?
Mainframes have used dual port memory for ever and one of the performance benefits is that I/O can take place concurrently with CPU access, but I'm not sure whether this technique is applicable at the PC level yet.
