Best ones I've made takes bout 60 to 90 days to properly go through their stages.I have tried on a few occasions to make wine vinegar, but sadly I cannot wait, and I end up drinking it all within the first week.
Lime vinegar is the best for chips. Balsamic I use to prep mushrooms and or onions.Never even occured to me. I only use white vinegar for chips. No balsamic or wine vinegar: they are far too hedonistic for me.

Did a Pineapple vinegarDates balsamic vinegar is the best. I've got a few other ones I've made which are really good: lichi, mango and lime
