Does ping times vary based on ISP?

I am planning on leaving Telkom ISP, but I have a bunch of low-latency apps (VOIP especially) whose perfromance I don't want to degrade. Are all unshaped options the same in terms of latency? Or does not going through telkom directly add some delay?

Any recommendations for an unshaped adsl provider are also welcome. Thanks!

AFAIK there should be no difference in latency between TelkomInternet and any other SAIX reseller
My recommendation for an unshaped adsl provider would be WebAfrica - outstanding service and their prepaid unshaped @ R125 / gig gets carried over if not used.
