If you are raiding then enchanting is important. You dont have to have it on your main, although being able to de epics that you replace is very helpful. I have enchanting on an alt(maxed) and send all my greens and blue/purple boe items to him to de. Save a fortune on keeping your main's enchants up to date. I also have an alt with jewelcrafting maxed. Save another small fortune keeping my main's gear gemmed.
Then I have yet another alt with alchemy to do me flasks and such.
I would say that enchanting, jewelcrafting and alchemy are must haves for a raider. My main character has engineering and mining. Engineering for the fun
Probably best to have gathering profession on your main to get the buffs. Use alts for the crafting.
