Excel Change Default Date Format

I'll keep looking for a solution that does not require having to select a formatting style everytime.

Excel seems to be applying a default custom format to dd-mmm for text strings resembling a date in a general cell. If you look at the custom options yyyy/mm/dd is there but excel is programmed to default to dd-mmm which is also an option. I've googled but cannot find anything on how to change this default behaviour.

You can't.
 
You should be able to change it according to Microsoft's doc - but it appears to be broken. I pasted it in an earlier post. The need to be notified that it is not working any more.
