We made beef shin curry on Saturday night and it was refridgerated until yesterday evening. I put it in a tupperware container with the intention to freeze it, seeing as there was a lot left and I didn't want to throw it out. Unfortunately I forgot to put it in the freezer and it stood outside (lid closed) all night.

What's the general rule of thumb on this kind of thing? Can I risk eating it or should I just chuck it? Would be a shame to chuck it seeing as it was really good curry and there's still a lot of it.

It should be OK. Do not refreeze but put in fridge and eat tonight.

Saturday? That was 3 days ago.

I only make enough food to last for 2 days. Keeping it for another day (3rd day) and just thinking about it makes me sick.

Which reminds me that I should buy zip lock containers.

Where is that food science guy that was on the forum a while ago?

Unfortunately meat has a window of safety of around 4 hours where it can be in the 'danger zone', around 40F-140F iirc. In all probability, it's fine, especially if the weather was on the cooler side. But the cost of finding out is quite high.

Cooked food should reach room temperature before refrigeration or freezing. If left out for longer than 12 hours you could get very sick. Refrigerate before bed.

Yeah, my main concern is the fact that it's already from Sat. If it was made last night and forgotten out I wouldn't be worried at all.

I think I'll just chuck it based on the posts here. I kinda new I would probably have to chuck it, but I hoped someone would say something like "curry is fine" or something. :p

It might be fine, but like Randhir said, it's a high price to pay if it's not.

No. If you're not going to eat it immediately it should be covered and refrigerated as soon as any steam has dissipated.

Either way is fine. One thing you don't necessarily want is hot food lowering your ambient temperature in your fridge.

Don't chuck just yet.
Easy test is warm it up and decide. Smell and if unsure taste the warmed food and you will have your answer.
Depends on ingredients how quickly it hits the level of loose bowel maker. Even that is not so bad. Every now and then a good colonic irrigation helps.

Until you have a obstructed bowel and they remove 15cm of your intestines.

I never risk it. Had food poisoning once, thanks Wimpy

A lesson you only need to learn once.

The key here is temperature. Just warm it up really, really hot. Eat and enjoy. Leaving it out AND eating it at room temp. will probably kill you....
