Fudge Recipes

I know that I can just google for one, but I found that the recipes that people (like H_C) submit are yummier.

The big issue for me was to get the condensed milk because it's hectic expensive and I don't wanna make my own. So, then I found that at Makro you can buy 1 liter Cans for R30ish. That works for me. :) So, I'll make them in bulk and store the extras some place.

So, does anyone have a recipe for me?

Yesterday it was malva pud today its fudge... Aiaiaia.
 
You will need a cooking thermometer to make proper fudge as it has to reach setting point - no more and no less, or it goes all wonky. Also, condensed milk isn't a part of the proper fudge recipe iirc - at least I've never used it in mine. I don't have my recipe with me but I will post it later today if I have the chance or on Monday if I remember. Oh, and you'll need corn syrup as well - it gives it a great finish.

You can experiment with fudge though which is great. I made Kahlua fudge once which was awesome...

The condensed milk option is the cheap and fast way of doing it. But please do share yours. A thermometer isn't expensive, so I'll make a plan.
 
It seems that I stand corrected.

Most of them doesn't need Condensed milk. What in the world was I planning on making that does need it? :confused:

I use the soft-ball stage method and I've yet to screw up a batch.
 
Actually condensed milk sounds more expensive than the milk and sugar method...

Not off the top of my head, no, sorry. I'm not a big fan of desserts and sweets though...

True. I like the thermometer because it's versatile - I use it for so many different things in the kitchen...
 
Straight out of The Royal Hostess

625ml sugar (500g)
150ml butter (70g)
5ml vanilla essence
1 x 397g tin sweetened condensed milk
60ml cold water

Place all the ingredients in a pot and stir over heat until the sugar is melted. Boil steadily stirring occasionally until the mixture reaches 112°C or forms a soft ball when tested in cold water. Remove from the heat and beat until thick and creamy. Pour 1cm deep into a buttered pan and when it is nearly set, cut into small squares with a sharp knife.

For chocolate fudge add 25ml cocoa before boiling.
For coffee fudge add 30ml coffee essence before boiling.

When I make it, I don't put all the ingredients in. First the sugar and water until the sugar is disolved and then add the rest.
 
hmmmmmmm fudge. why is it you get the best fudge from fetes or church bazaars?

about 2 weeks ago i bought the best fudge and coconut ice from a church bazaar and a few weks ago my wife baked some malva pudding. as she ran short of one ingrediant it was not her best malva but it was darn close.
