Google Sheets - track data

Was wondering...if I have a Sheets docs that's pulling (API) data via a script to populate the spreadsheet with new data each day, how would I go about automatically tracking those changes over time - so that at the end of some period I could plot and chart it? Some function in Sheets, script, addon? I'd still need to open the sheet daily to refresh the data, that's fine, but how to track that data.

Here you go. If you need any help integrating it, please let me know. I would be able to create an admin panel you can login to and view the charts or download the data.
